Summary: A Thing Of Beauty Is A Joy Forever!
Comment: This tagine was my holiday gift to me! Have wanted a tagine for years but didn't have the time to use one. Now retired, I finally bought a tagine and wish I had bought it years ago! Before you use it for the first time, all you have to do is fill the bottom of the tagine with milk and cook it till it boils. Turn off the gas and let the tagine sit until the milk becomes cool. Wash and dry. I hand washed mine.
I just finished my first meal in the tagine and I cannot describe how tender the meat was. I own a lot of Moroccan cookbooks with lots of tagine recipes, but you aren't going to find one for pork chops, obviously. The Muslims don't eat pork. May I share with you my first meal in the tagine? I put three large pork chops on the bottom of the tagine on the stove. I layered potatoes and onions, with a hot pepper sliced in small rings. I poured in just enough chicken (yes chicken) broth to cover the food in the tagine.
I sprinkled an assortment of my Penzey's herbs and spices into the chicken broth while it was cooking on my stove before putting it into the tagine so they would meld into the soup base. You MUST get a Penzey's catalog and order everything they offer. I use the 1/4th size. It's plenty for one person and it lasts. I used onion, garlic, parsley, cumin, salt, pepper. Poured the hot soup over the food. Put the top on the tagine, turned the gas down to low, and set my timer for one hour.
The aromas not only filled my apt. but wafted into the halls. One of my neighbors actually knocked on my door while it was cooking and asked, "What on earth is that fabulous aroma?" I invited him in and showed him my new Moroccan Tagine. He had never seen one before. When I lifted the top off to show him the food his mouth dropped open. He said, "I want one!" Well, go on-line to amazon.com and tybe in the word tagine and you'll see it listed there. Gave him the name, Emile Henry, the size, and color (red). He rushed out the door to, hopefully, buy one for himself. I promised to bring him some of the food when it finished.
When I took the pork chop from the tagine it literally fell away from the bone! It was THAT tender! The onions, potatoes, spices, chile pepper, all melded into the meat and left a soup that can be eaten on it's own. Fabulous! Perfectly wonderful! A glass of red wine (no bread) and the meal was a huge success. I'm going to take one of the chops with the vegetables over to my neighbor now and I know he is going to love it. A little over an hour and you have a meal to really savor. I made enough to last me for the weekend. I'll just heat it up and throw a little mango chutney on the pork chops and I'm home free.
I adore this tagine! Worth every cent and then some. I rested the top of the tagine on a towel when I took it off. I wouldn't want it to sit on a cold marble top or something cold. Maybe it would be fine, but why take the chance of cracking it? I'm just super careful with my kitchen equipment. Hand washed it, and when it's dry I'll put it back on the top of the stove where it looks beautiful.
If you are looking for something to slowly cook your food, don't buy a crock pot or slow cooker. Buy a tagine. You can buy the smaller one for a single serving if you live alone and don't want a lot of food. Either way, you can't go wrong with Emile Henry products. This one is a winner!

Comment: I bought this Emile Henry Tagine as a gift for my daughter's boyfriend, who had been looking for one for a long time. I chose this one for several reasons: it can be used both on the stove top or in the oven; it can go directly on gas or electric burners without a diffuser; their technology allows it to be used on high heat and to go from freezer to microwave to oven; it is lead-free (not always true of imported ones) and it is very beautiful!
They called me as they were eating their first meal cooked in it, a delicious and original concoction of chicken, squash, chinese 5-spice mix, apricots and cinnamon. They reported that it cooked beautifully, cleaned up easily, and looks great in the kitchen.
I bought from Amazon because of the lowest price and quickest service getting it to me. I ordered on a Tuesday and no other vendor could promise that I would have it by Friday! (Even with fast delivery service, they couldn't get the order processed and get it out their door fast enough.) With Amazon, it arrived perfectly on time as promised.

Summary: Love my tagine!
Comment: I bought this tagine last year and have very much enjoyed using it for slow-cooked Moroccan and African dishes (typically requiring 4-8 hours cooking time). The results are a bit different than using a crock-pot, although the process is similar; the difference is probably due to the conical shaped lid. This model is suitable for stove top use; the less expensive and smaller imported Moroccan ceramic versions are meant to be used in an oven, and they are prone to thermal stress cracking if you're not careful. Le Creuset also makes a tagine (cast iron, similar in price to the EH model); I elected to purchase the Emile Henry ceramic version because its more closely related to the traditional design, and you can braise your meat directly in the bottom part right on the stove prior to slow cooking. This tagine is large enough to easily prepare a meat and vegetable dish for 2-4 people, and it cleans up very nicely. Highly recommended because it's an effective means of turning inexpensive meat cuts into mouth-wateringly tender and tasty stews.

Summary: Excellent Product !!!
Comment: I can't praise the Emily Henry Co. for this product. The craftmanship is
superb and this isn't just another cheap over priced product. I've cooked tagines on the stovetop on medium at perfection. The design allows the flavors to recirculate and permeate the food. My chicken apricot sauce with pinenuts was perfect! I have also used it to brown steaks, then
slow cooked to tender. I think I've just found the perfect replacement for the slow cooker. It's really that wonderful.
